Grilled Shrimp & White Beans with Herbs de Provence over Spring Mix Salad
This one I put together myself. I used shrimp I had in the freezer and, after thawing, sprinkled a generous amount of Herbs de Provence on it. I cooked it on the stove in a bit of olive oil and tossed in the a can of white beans for the last few minutes. Using the beans can help the shrimp go further. I put the shrimp and beans over a spring salad mix tossed with a just a bit of light italian dressing. Trust me, it’s as good as it looks!

This recipe is a absolutely delicious! The leftovers were gone in a flash as the kids fought over who got to take them to school the next day. Made with five cans of great Northern beans and only 4 chicken breast halves, it is super-easy on the budget!
