It’s Spring and the time of rebirth is upon us. Easter and Passover are in the air and while we are not a particularly religiously active family, we do tend to celebrate the big holidays – Passover among them.
Passover is the holiday commemorating Moses leading the Jews out of the bondage of slavery and delivering them to the promised land. It is a time when Jews all over the world remember oppression everywhere and pray for equality and justice for all. Because when the Jews were hurridly preparing to leave Egypt, there was no time to let the yeast in the bread rise, we do not eat leavened bread during the holiday, but instead eat Matzo during the eight days of the celebration. This can make for rather challenging menu planning and one must be especially creative during this period. No sandwiches, no stuffing, no breading…you get the point. What’s more, traditionally, many Jews stay away from legumes and rice, so big bummer there, too!!! Well, thankfully, there are lots of dishes, including desserts, that one can find on the Internet to help you eat really well during this special time of year!
This year, Passover starts the evening of Friday, March 30th and continues through the evening of Saturday, April 7th.

- Thursday –3 lemon (juiced and rind), 1 bundle asparagus
- Saturday – chicken broth, carrots and Matzo Ball mix
