It’s been too, too long since I’ve diligently tracked my meals…and money. Now it’s time to get back in the game! We made it through 2018 saving tons of money by better managing our food budget so, as we tread into 2019, and prepare for two kids about to enter two pricey universities, the time to pull out all stops on the budget train is now!
As is my style, I start by taking stock of what’s in the pantry. Those of you who know me, can be sure of the fact that there’s plenty of rice and beans on hand (let’s face it, few foods are as inexpensive and healthy), so the start of the week will bring out one of my meals, Cuban Black Beans with Saffron Rice. Then, with a smoked sausage in the fridge and a bag of potatoes hanging around, I plan in trying this sheet plan recipe I found online. I also have tons of chicken thighs from a recent Costco shop, so I’ll use them in an incredible Chicken Tahini recipe I found in an old Cooking Light Magazine. That alone will pull me through the first half of the week. Since I’m headed out of town for a college visit with my son, the last half of the week will rely on leftovers from the week and a stash of jambalaya in the freezer. I made the jambalaya a few weeks back-my daughter and my husband love this recipe from Emeril Laggase, so they’ll be thrilled. When I return, I’m planning on a stuffed pork loin. I made this recipe once before and it was a huge hit, so give it a shot yourself and be sure to tell me what you think!
