Winner, winner, chicken dinner!


So many of us are working from home these days – you’d think that would mean plenty of time for cooking dinner each evening. HA! If you’re experience is anything like mine, you may be wondering where the time goes! There are still metrics to meet at work and an endless array of -as we call it-“household business” to-do’s. On top of that, many parents have school-age kids that are not in a physical school setting. So, the name of the game is quick and easy meals, like this one…

What’s also nice about this dish is that it is super easy on the budget! Chicken thighs are a fraction of the price as chicken breast and rice is one of the most economical foods there is! Thyme and parsley never cost me a cent. Why? I grow both in my backyard. Even if you think you don’t have a green thumb, I’d urge you to start with a few herbs, especially rosemary, thyme, and parsley. You’ll be surprised how easy they are to grow! But, now, back to this easy meal…

I used my large Dutch oven rather than a baking pan. I just put everything in the pot, per the recipe. This only took a few minutes. I put the cover on and popped it in the oven for an hour. I took off the cover for 30 more minutes, and then, just before taking the pot out, I turned the dial to broil for just a few more minutes and let the chicken become golden and crispy!
