This recipe’s author is spot on when pointing out that soft bread crumbs are the key to this stuffing. It was just as easy as as outlined in the recipe – simply put bread in your food processor and churn it into the crumbs. I used whole wheat bread and it was delicious. My daughter was amazed…she actually said she thought I bought this rolled pork loin from a specialty store!
This is an amazing tasting and oh-so-healthy recipe I found one day when I was flipping through the pages of Cooking Light magazine while passing time in a doctor’s waiting room. It is super healthy and it tastes amazing! It became an instant hit with our whole family! Give it a try!
We buy pork loin at Costco and divide it into thirds or fourths depending on how large the package is. On our last shopping trip, we paid about $16 for nearly 10 pounds! We divided it into four portions – that’s $4.00 a dinner! We brined it as detailed in the recipe above which called for ingredients we already had on hand. Adding the popovers was a last minute idea. I was digging for the roasting pan and came across my popover pans (these are like muffin tins only the cups are much deeper). My son and I whipped these up in no time – and for pennies! They are basically flour and eggs. If you haven’t tried a popover before, you are missing out!
Hint: I substituted 2 bags of frozen butternut squash cubes for the fresh squash. Serve with some french bread or a grilled cheddar sandwich.
Grilled Shrimp & White Beans with Herbs de Provence over Spring Mix Salad
Now, I know what you are thinking – shrimp is not among the cheapest of proteins. That’s true, but if you use it in moderation, and add in other ingredients (like the Cannellini white beans I used here), it will go further. What’s more, when you are tossing it over a healthy and inexpensive spring mix salad, you can have a great meal for a few dollars. I threw this idea together myself. I sprinkled a generous amount of Herbs de Provence on some large shrimp and sauteed them in some extra-virgin olive oil. I tossed in the a can of white beans during the last few minutes. I laid the shrimp and beans over a spring salad mix tossed with a just a bit of light italian dressing and had a healthy meal that tasted as good as it looks.
Who doesn’t like pizza?!! This one leaves out the tomato sauce in favor of an infused garlic oil. The dough is topped with asparagus, bell pepper, onion, and plenty of shredded mozerella cheese. Your kids will love it, and you’ll feel good about them getting their veggies (and none of the grease the standard delivery pizza includes)!
There’s nothing like a pot of Emeril’s Jambalaya to warm you up on a snow day! My family loves this recipe. I substitute both red and green peppers for the green peppers, and use smoked sausage rather than andouille (forgive me, Louisiana!).
This recipe was super easy and, oh-so-good! The leftovers disappeared in a flash. Made with five cans of white northern beans (less than $1 a can) and just 4 chicken breast halves, it can serve a family of four (or more as we had plenty) for a few bucks. We served it with tortilla chips on the side.
